Eating at a Shinkansen seat is allowed
JNTO’s Shinkansen FAQ says eating and drinking are generally allowed, and JR Central explicitly welcomes coffee or an ekiben at a Tokaido Shinkansen seat. The fold-down table is the clearest sign that the service is designed for this.
This is different from an urban local train or subway, where JNTO says eating a meal is generally considered impolite. Confirm the train type rather than applying one rule to all rail travel.

An ekiben is designed for the journey
Ekiben are station bento boxes associated with rail travel and often feature regional ingredients. JNTO describes them as a normal part of long-distance express and Shinkansen travel.
Open the box only after boarding and finding your seat. Do not stop in the platform flow to unpack a meal, and keep any chopsticks, sauce packets and small wrappers from falling between seats.

Buy before boarding unless service is confirmed
JR Central’s current guide says food and drink sales are not available in Standard Class on the Tokaido Shinkansen, while a smartphone ordering service is available in specified Green Car services on Nozomi and Hikari trains.
Other Shinkansen operators and trains have different services. Treat onboard sales as train-specific, not guaranteed; buy water and the meal at the station when timing permits.

Be considerate with smell, sound and space
Permission to eat is not permission to turn the row into a picnic. Keep food on your table, avoid strong lingering odors when you have a reasonable alternative and do not use an empty neighboring seat without its passenger’s consent.
Open crinkly packaging briefly, speak quietly and use headphones. Keep hot liquids and open cups away from the aisle where passing passengers can knock them.

Recline with the tray behind you in mind
JNTO says it is customary on Shinkansen and other long-distance transport to ask the passenger behind before reclining and to avoid full recline, especially when the tray table is being used.
Turn, ask briefly and recline slowly. Return the seat upright before leaving and follow the crew’s instructions during boarding, arrival or an emergency.
What to know
Drinks are allowed, but disruption is not
Coffee, tea, water and other ordinary beverages can be used at the seat. Keep a lid on when possible and stabilize the cup before the train curves or brakes.
If you choose an alcoholic drink where permitted, keep the amount moderate and your behavior quiet. A ticket does not excuse intoxication, harassment, blocked aisles or any conduct that inconveniences other passengers.

Clean the space before leaving
JR-West’s passenger guidance says that when eating or drinking onboard, passengers should keep the cabin tidy and avoid inconveniencing others. Fold packaging, seal anything wet and check the seat pocket, floor and window ledge.
Use onboard or station bins only for the categories marked there. If no suitable bin is available, carry the waste until you find one rather than leaving it on the seat or tray.
What to know
Food restrictions and health needs still matter
A Shinkansen is a shared space, so manage allergens and dietary needs before travel when possible. Ingredient labels may be Japanese-only, and an ekiben shop may not be able to guarantee separation from an allergen.
Keep necessary medication and a safe snack accessible. For a serious allergy or medical condition, prepare the required emergency plan rather than relying on onboard sales.

Use the fallback.
- If station shopping lines are long, prioritize boarding and use food you already have rather than risk missing the train.
- If your class has no onboard sales, wait until the next station stop or destination unless you already brought food.
- If the passenger behind is using the tray, keep your seat upright or recline only after they agree.
- If a drink spills, contain it immediately and notify crew when cleanup assistance is needed.
- If no correct waste bin is available, close the bag and take it with you.
- If your service posts a different food rule, follow the operator’s rule.
